Overnight oats | breakfast for a busy schedule

Breakfast can be a difficult meal to eat due to busy schedules, but I have the perfect solution to eating on the go. It’s called Overnight Oats! Overnight Oats is simply a cold version of oatmeal with yogurt and berries on top. You just stick it in the fridge overnight and the next morning you have an easy meal to eat on the run! Here is how to get started:

Ingredients 

½ Cup Rolled Oats

1 Cup Unsweetened Almond Milk

2 Tablespoons Chopped Almonds

2 Tablespoons Chopped Walnuts

¼ Teaspoon Cinnamon

A Dash of Nutmeg

½ Teaspoon Vanilla Extract

1 Tablespoon Chia Seeds

2 Tablespoons Flax Seeds

1 Scoop Greek Yogurt

½ Cup Berries

1Tablespoon Honey

  1. Mix the oats, almond milk, almonds, walnuts, cinnamon, nutmeg, vanilla, flax seeds and chia seeds together in a large bowl.

  2. Once completely mixed, distribute the ingredients from the large bowl into a single jar or Tupperware containers that can be sealed. Place the Overnight Oats in the fridge, after sealing the container, and leave it for at least 6 hours. I typically recommend leaving it overnight to sit, hence the name overnight oats.

  3. After the mixture has been in the fridge for at least 6 hours, remove the Overnight Oats and add your toppings!

 

Toppings:

1 Scoop Greek Yogurt

½ Cup Berries or Banana

1 Tablespoon Honey

 

Or...Make it your own: You can take out or add any of the ingredients listed above to make it flavored to your liking. Don’t hesitate to try new things such as cocoa nibs, bananas or peanut butter. Remember, this is a recipe for a single serving, but you can always make bulk and use them for the week because they will just get better with time in the fridge!
