Vegan Kale Caesar Salad
I have been trying to perfect this recipe for a while and I think I finally got it! I love kale salad and have been wanting a good Caesar with some crunch!
Ingredients
Salad
1 large bunch of kale chopped into small pieces
1/2 red onion, finely sliced
2 slices sourdough cut into cubes (optional: GF bread) - I like to grill my bread so it’s crispy!
1 tsp olive oil
1/2 avocado, sliced
red pepper flakes
Caesar Dressing
1/2 cup raw cashews
1/4 cup water
juice of 1 lemon
3 tsp olive oil
2 tbsp dijon mustard
1 garlic cloves
1 tbsp white wine vinegar
1/4 tsp salt (add extra if it suits your taste preference)
pinch of black pepper
Cashew Crunch
1/2 cup raw cashews chopped/crushed into small pieces
1 garlic glove
2 tbsps olive oil
How to make
Begin by making the cashew crunch. Heat a pan with 2 tbsps of olive oil
Add garlic and 1/2 cup raw cashews chopped and mix until cashews turn golden.
Remove from heat and let sit.
If you want to crisp up your bread, this is the time! Either place in the oven or use the stove top to give it a nice crisp with some olive oil.
Next make your caesar dressing. Add all of the ingredients to a blender and blend on high until smooth. Add salt and pepper to taste.
To make the salad, cut the kale and onions. Place in a large bowl.
Now, add 2 tbsps of olive oil to the kale and onions and massage through the kale until all the kale has some olive oil on it. This helps breakdown the kale and add tons of flavor.
Add the salad dressing to the bowl.
Sprinkle the cashew crunch onto the salad and toss everything together.
Serve into bowls, top with sliced avocado, red pepper flakes and crispy bread.
